To begin, the iron is preheated and a spoonful of the simple lemon or cardamom nuanced batter is poured onto the open iron. The two halves are then pressed together by holding the wooden handles and seconds later the iron is easily rotated and flipped so both sides of the cookie are evenly browned. The iron adds a beautiful and intricate scroll design to the cookie in the next few seconds and then the hot wafer is removed with a utensil and rolled on the wooden cone where it hardens into a delicate, crisp cylinder. The newly enhanced base of this iron, with it's "ball and socket" design, makes turning the cookies easy. An enlarged grease well on the base captures melted butter to reduce flareups.
